Welcome to the Dillon Dam Brewery & Restaurant. It is a pleasure to share our passion
for brewing, along with a unique dining experience. From the delicate to the bold, from the sunniest pilsner to the darkest stout, our eight beers give you a galaxy of flavors resulting
in a sublime tasting experience. Owner and general manager George Blincoe,
along with Matt Luhr, our Great American Beer Festival award winning brewmaster,
bring passion and expertise to each Dam beer and meal.
Wildernest Wheat
Every Body's All American...
Brewed with lager yeast, Czech Saaz and German Hallertau hops, this American-style wheat is a pleasant light-bodied beer.
Dam Straight Lager
Silver Medal. Great American Beer Festival 2001 !!!
Amber-colored and medium-bodied, this Vienna-style lager has a slight caramel malt taste with a mild hop finish. It's slow-brewed with bottom-fermenting yeast and German hops.
Extra Pale Ale
Taste The Dam Difference...
This is the style of beer that started the micro-brewery revolution. It's freshness and distinctive hoppy floral characteristics will make the beer connoisseur smile.
Sweet George's Brown
Silver Medal, North American Brewer's Association 2000!!
It's a creamy English-style ale. Brewed with a variety of brown & caramel malts, it is lightly hopped for a pleasant flavor and aroma.
McLuhr's Irish Stout
Like The Green Velvet Hills of Ireland...
An Irish style stout brewed with caramel & black malts. Slightly dry, yet smooth & malty sweet, this draft is dispensed with a blend of nitrogen & carbon dioxide to create a velvety mouth-feel and a creamy head.

Brewing Beer 101
To brew beer, first you need to buy some barley...55,000 pounds if you have a silo like ours. Mill the barley with some other grains if you like, heat around 300 gallons of water and let them mix in the mash tun. This hot solution is called "wort". The wort is, in turn, pumped into the brew kettle where the beer is cooked with hops (a flower) for a short time. After that, the brew is transferred to the fermenter, cooled to about 69 degrees and yeast is added. Fermentation lasts for about 1-2 weeks at which point the beer is filtered.

Sun-dried tomatoes, artichoke hearts, garlic, spinach and Asiago cheese blended and served with fresh bread.
